If you’re OK with artificial sweeteners you can get zero calorie, sugar free ice lolly type things. Not sure what they’re called in the US, but basically frozen diet soda in a plastic tube that you cut the end off. A good treat for kids (and the young at heart
) and I doubt anyone could tell the difference!
Just about anything around the outer perimeter of the grocery store. Whole grain breads, pita pockets, flat bread wraps. Fresh fruit and veggies, lean chicken breast, brown rice, sweet potatoes, (baked). Bake, broil, or saute in little olive oil and pour veggies over rice or stuff in wraps or roll up in flat breads. Salads, with low fat cheese or drained, rinsed, cans of beans scattered on top. Spray, low fat dressings. Don’t soak your salads in fatty dressings. Low fat cottage cheese, low fat yogurt, whole grain cereals with skim milk, fresh or baked fruits for dessert. The list goes on and on. Use the darker lettuces for more taste and vitamins. Something that is so delicious your kids will even like — OVEN FRIED SWEET POTATOES. I can’t believe I finally tried them. Cut the potatoes into wedges (they decrease in size while cooking, so you might want to leave as strips). “Marinade” with olive oil or canola oil, pinch of cayenne pepper and a salt mix and shake in plastic baggy or toss using your hands. Cook in preheated oven for 20 to 25 minutes turning only once (be careful, they are very soft — I use tongs). For yourself, hummus is also very good (I don’t think the kids will like it). Buy one of the flavors, use to dip vegetables (peppers, carrots, whatever), extremely tasty. Instead of frying chicken, oven fry chicken (using breadcrumbs); another goody. Turkey wraps (turkey with cheese and a vegetable wrapped in turkey deli slices, or even a vegetable wrap with hummus as the spread(using a tortilla). All wonderful (and leaving you for more) options. TACO CASSEROLE
1 lb ground skinless chicken breast
1/2 c onions, chopped
1/2 c bell peppers, chopped
1 clove garlic
1 pkg taco seasoning mix
8 ozs taco sauce
1 c fat-free sour cream
1 c fat-free cottage cheese
1 c low-fat tortilla chips, crushed
1 c low-fat cheddar cheese, shredded
Heat oven to 400. Spray cooking spray on bottom of a 2-quart casserole dish; set aside. In a skillet, cook chicken, onion, peppers, and garlic clove until tender. Add seasoning mix and taco sauce; set aside. In a medium bowl, combine sour cream and cottage cheese; set aside. Place half the crushed chips in the bottom of casserole dish. Add meat mixture to cover the chips, then cover the meat with sour cream mixture. Sprinkle with cheese and remaining crushed chips. Bake, uncovered, for 30 minutes or until cheese has melted.
